Also spelled \u201csiphon\u201d by the French, the concept of the self-pressurized carbonated beverage goes back to the late 1700s in France with the \u201cmodern\u201d version produced a few decades later, more for sanitary reasons than for specialty drinks. Soda syphons were most popular in the 1920s and 1930s in soda fountains and bars.
